Banana Rum Jam
Ingredients
- 1/2 cup sugar
- 1/2 cup water
- 6 overripe bananas, mashed
- 2 Tablespoons lime juice
- 1 teaspoon vanilla
- Pinch of salt
- 2 teaspoons dark rum
Directions
Add the sugar and water in to a small pot and bring to a boil over medium heat, stirring until the sugar dissolves. Once boiling, reduce to a simmer, then add the mashed bananas, lime juice, vanilla, and salt, and stir to combine. Simmer, stirring constantly, for 15 minutes. Stir in the rum and coook another 5 minutes. Cool, transfer to sterilized jars, and chill.
